Derek Dietz

Derek has been in the culinary industry for over 13 years. He was trained in classical French cuisine with global influence. Starting his career in his hometown country club he quickly learned that his life would be dedicated to food.

 

As a line cook at Providence Byblos in Rhode Island he learned the basics of Mediterannean cooking with a specialty in Lebanese cuisine... He then went to Montana and worked at Siam Thai in Billings, where he learned authentic Asian techniques and flavor profiles. 

After he graduated with an AOS in Culinary Arts from the Culinary Institue of America in New York he started working at the Fountain Restauraunt in Philadelphia. Here he learned what it takes to make 5 star food. Under Chef Martin Hamann and Timothy Mauer he quickly moved up the ranks from garde manger to saucier at the #1 city club in America, The Union League of Philadelphia... Here Derek was blessed with working in a brand new 5 star kitchen with only the finest ingredients at his fingertips.

 

After playing with fois gras and truffles for 2 years, Derek decided to move west and found his home in Coal Creek Canyon, Colorado. He has 2 beautiful dogs and a cabin in the foothills. His second home is Sunnyside, where he opened Bocadillo!

 

Derek pays homage to his hometown of Philadelphia by serving authentic Philadelphia cheesesteaks with amaroso rolls all day. co
